Our modular concept allows you to expand the large bread line to include round bread. In addition to the KAO divider and KRV proofing machine, our KVB pre-shaping device creates short dough rolls that are then perfectly rounded in the KCO conical rounder.

The production of round bread also begins with dividing dough into pieces using the KAO.

Compact dough dividing machine on wheels, for precise scaling of dough pieces for long, round, or boule bread. Scaling and rounding with one machine not only saves space but also costs. The weight of the dough pieces is adjustable. Available in various speeds. The special rounding plate ensures the correct shape and length of the dough pieces. With less oil on the dough pieces, there is less chance of bread defects and less contamination of the Kalmolux bags. All control buttons are within reach, also via the control panel of the KRV proofing machine. The dough presser increases safety and makes it visible how much dough has been scaled. Compliant with all CE and HACCP standards.

The divided dough pieces are given time and rest in the KRV to proof.

Our pre-shaping device sheets and degasses dough pieces, then pre-shapes them into short dough pieces and perfectly rounds them in the conical rounder. This is a crucial step: by adjusting the degree of degassing, the baker determines the fineness of the bread structure. This results in unparalleled quality of round bread, just as the baker wants! The dough balls can be placed directly onto the loading belt without further processing.

The KCO completes the process by forming a large round dough ball.
