Across Europe, the popularity of artisanal and specialized bakeries is growing. This trend is putting pressure on industrial producers, particularly in the higher market segment where consumers increasingly value authenticity, craftsmanship, and pure ingredients.
In France, Germany, and Italy, there is even a true comeback of traditional bakers. Old techniques are being embraced again and combined with modern innovations, leading consumers to consciously choose real bread once more. In the United Kingdom, too, the call for transparency is stronger than ever. The “Real Bread Campaign” has held major supermarket chains accountable for misleading claims about ‘freshly baked’ products, prompting consumers to take a more critical look at what is actually happening in the oven.

Artisanal bakeries are responding to this trend in a smart way. Thanks to their flexibility, they can respond extremely quickly to local tastes, trends, and dietary preferences. New types of bread or pastry creations often appear in their display cases while industrial producers are still in the development phase. In Germany, the German Bakers’ Confederation, which represents more than 9,200 bakeries, emphasizes that craftsmanship and more energy-efficient techniques are key strengths that distinguish artisanal bakers from mass producers.
Technology is playing an increasingly important role in this. Suppliers of specialized bakery equipment, such as Kalmeijer, are adapting to this shift toward modern craftsmanship. By developing machines that combine efficiency and energy savings with respect for traditional baking methods, they enable artisanal bakeries to maintain quality, consistency, and flexibility. In this way, craftsmanship can be preserved while bakers are better equipped to respond to growing demand, labor shortages, and changing consumer expectations.
For larger producers, this shift means they must reinvest in product differentiation, premium quality, and innovation, without losing their position in the value-driven mid-market segment. The market is changing rapidly, and only those who continue to innovate and listen to consumers will remain relevant.
