Taai-pepernoten are a true St. Nicholas (Sinterklaas) classic from the Dutch bakery tradition. With their rich, spiced flavour and distinctive chewy texture, they are a favourite among both young and old during the Sinterklaas season.

Kalmeijer helps bakers produce the most delicious pepernoten efficiently during the busy Sinterklaas season. Here's a look at our recipe for traditional Dutch soft gingerbread cookies (taai-pepernoten):

Ingredients

  • 100% pepernoten mix (Fa. Dethmers)
  • 2% pepernoten spice mix
  • 3% cookie sweetener
  • 20% water (25°C)

Method

  • Mix the pepernoten mix and spices. Add the water and prepare the dough. Knead for 10 to 12 minutes and process the dough immediately.
  • Place a pre-sheeted dough slab of 10 mm thickness on the feed roller and press it into position. Lightly coat both the dough slabs and the moulding roller with a resin-based oil just before feeding. Feed pre-sheeted dough slabs of the correct width into the machine.
  • Use a Teflon knife when processing this product.
  • Form the pepernoten using the Biscuit Machine KGM and the following rollers:
  • Small pepernoot: Roller no. 1400-900 (Ø 22 mm, thickness 9 mm) Large pepernoot: Roller no. 1400-910 (Ø 30 mm, thickness 9.5 mm)
  • Roll the pepernoten by hand through oil.
  • Bake the pepernoten close together for approximately 15 minutes at 200°C.

With our machines, you can easily produce delicious pepernoten. Traditional in flavour, recognisable in appearance, and irresistible to your customers.
