Recipe: Mother’s Day Biscuits

A beautiful and heart‑warming example is our recipe for Mother’s Day biscuits: a classic shortbread dough that, with a touch of beetroot powder, takes on a subtle pink hue. Ideal for celebrating mothers in a special way.

Ingredients

  • 100% flour
  • 50% brown sugar
  • 55% cold butter
  • 8.3% egg yolk
  • 1.5% baking powder
  • 3% lemon zest
  • 1.6% beetroot powder

Method

  • Mix the cold butter (cut into coarse pieces) with the sugar and lemon zest.
  • Sift the flour and baking powder and mix them with the beetroot powder.
  • Briefly mix the dough until just combined – do not overmix to prevent toughness.
  • Let the dough rest overnight in the refrigerator, then knead briefly until smooth just before use.
  • Optionally garnish with (white) chocolate.

Process the dough using the Biscuit Machine KGM and use either the Scalloped Roller (no. 1340‑900) or the Heart Roller (no. 1340‑905). The result: a beautifully pink‑colored cookie, perfect for Mother’s Day.
