Recipe: Custard Rolls for Father’s Day

Kalmeijer helps bakers create distinctive seasonal specialties. Thanks to the Small-Bread Machine and the Rolls and Baguette Machine, this delicious Custard Roll is easy to produce and a real treat for fathers on Father’s Day.

Ingredients – Dough

  • 100% flour – 10,000 g (Edelweiss Meneba)
  • 5% yeast – 500 g
  • 2% salt – 200 g
  • 10% bread improver – 1,000 g (Korrent Goud)
  • 5% bread cream – 250 g (Cramix Goud)
  • 5% bread improver – 250 g (White Rolls Powder)
  • 56% water – 5,600 g

Method

  • Knead the dough for 5 minutes on first speed, then 8 minutes on second speed (dough temperature approx. 26 °C).
  • Process the dough with the KKM into 55 g dough balls.
  • Allow the dough balls to rest for 30 minutes in grey trays dusted with rice flour.
  • Process the dough pieces into flat discs using the KPS.
  • Allow a final proof of approximately 70 minutes.

  • Rounding time: 0.8
  • Run-on time: 2.0
  • Cup size Ø: 100

Baking

  • Baking time: 7 minutes
  • Oven temperature: Top heat: 270 °C, reduced to 260 °C Bottom heat: 260 °C, reduced to 250 °C
  • Without steam

Finishing

  • Allow to cool and cut open
  • Fill with yellow custard cream
  • Decorate with powdered sugar
