Recipe: Caramel biscuits with caramel pieces

Ingredients

  • 100% Zeeland flour
  • 60% butter
  • 35% caster sugar
  • 3% whole egg
  • 5% caramel compound (Dawn)
  • 1% coarse sea salt
  • 1% baking powder
  • 40% caramel pieces (4 mm)

Method

  • Mix the chilled butter (in large chunks) with the sugar.
  • Add the egg and caramel compound and mix briefly (visible butter particles are not a problem).
  • Sift the flour and baking powder, add this together with the caramel pieces and sea salt.
  • Mix into a smooth and supple dough, but not too long – otherwise it will become tough.

Process the dough using the Biscuit machine KGM and use the heart shape roller (no. 1340-900). This roller is ideal because the thicker shape holds the coarse caramel pieces well. The biscuits can be finished to your own taste and preference with egg or decoration.
