This biscuit meets the demand for healthier options with alternative ingredients such as oats, dried fruit, or organic raw materials. More and more often, bakers ask us whether such recipes can be processed using the Kalmeijer Biscuit Machine (KGM). In most cases, this works—sometimes with a minor adjustment.
For this recipe, we combine oat flour, rolled oats, cranberries, and currants. Important: the fruit must be finely chopped (approx. 4 mm) so it runs smoothly through the machine. The fruit is not soaked, to keep it firm enough for processing.
Adding syrup ensures a firm, crisp result and compensates for the dough’s higher moisture content. Apple syrup can also be used perfectly for this purpose.
The result: a contemporary biscuit with a rich bite and a recognizable artisanal character.
Process the dough using the Biscuit Machine KGM and use the “Friese duimpjes” roller (no. 1260-901). The result: a firm, crisp biscuit with a rich bite, where the oats and cranberries remain beautifully visible.
