Recipe: Mexican Wedding Cookies

Ingredients – Dough

  • 100% flour – 3,000 g (Edelweiss)
  • 30% powdered sugar – 900 g
  • 60% butter – 1,800 g
  • 45% finely ground walnuts – 1,350 g
  • 16% whipping cream – 480 g
  • 3% cocoa – 90 g
  • 1.5% vanilla – 45 g
  • 0.7% cinnamon – 21 g
  • 0.3% salt – 10 g

Method

  • Prepare the dough one day in advance due to the high whipped cream content.
  • Allow the dough to cool and rest היט for optimal processing.
  • On the production day, briefly knead the dough until smooth.
  • Process using the Kalmeijer biscuit machine, optionally using multiple rollers such as:
  • a Christmas roller
  • a special round roller for uniform export shapes

Finishing

  • After baking, generously coat the cookies in powdered sugar to achieve their characteristic appearance and flavor.
