The production of round bread and boules also begins with measuring dough pieces using the KAO.

Compact measuring and rounding machine on wheels, for precise measuring of dough pieces for long, round, or boule bread. Measuring and rounding with one machine not only saves space but also costs. The weight of the dough pieces is adjustable. Available in different speeds. The special rounding plate ensures the correct shape and length of the dough pieces. With less oil on the dough pieces, there is less chance of bread defects and less contamination of the Kalmolux bags. All control buttons are within reach, also via the control panel of the KRV proofing machine. The dough presser increases safety and shows how much dough has been measured. Compliant with all CE and HACCP standards.

The measured dough pieces are given time and rest in the KRV to rise.

Our KRV proofing machine offers infinitely adjustable proofing time and shaping speed of up to 19 dough pieces per minute. Enjoy better bread quality thanks to excellent dough conditioning. To make long breads, the proofed dough pieces are rolled out and folded by the KVTO, just as the baker would do by hand.

To create beautiful round loaves, the KVB first rolls and degasses the dough pieces.

This is a crucial step: by adjusting the degree of degassing, the baker determines the fineness of the bread structure. Our pre-shaping device rolls and degasses dough pieces, which are then pre-shaped into short dough pieces and subsequently perfectly rounded in the conical rounder. This results in an unparalleled quality of round bread, exactly as the baker desires!

The KCO completes the process by forming the dough into a large round loaf.

Our conical rounder has a short rounding path where the dough pieces are perfectly rounded. The loaf can be placed directly on the loading belt without any further processing. Combined with the degree of degassing, the fineness of the bread structure can be determined. This results in the highest quality of automatically rounded bread.
