Method
- Mix the chilled butter and sugars with the salt.
- Add the egg to the butter-sugar mixture and blend.
- Once the egg is incorporated, add the flour mixed with the sifted baking powder.
- Gently mix in the flaked almonds and chopped hazelnuts.
- Process the dough using the Kalmeijer KGM biscuit machine.
- Use wreath roller no. 1123-900/A or size 30 / 90 mm.
- Before baking, brush with whole egg and sprinkle with a mixture of chopped hazelnuts and flaked almonds.
- Bake at approximately 175–180°C for 12 to 15 minutes.
