Kalmeijer Helps Bakers Create the Most Delicious Cookies

Here’s a look at our recipe for irresistible butter wreath cookies:

Ingredients

  • 100% flour
  • 62% unsalted butter
  • 28% light brown sugar
  • 0.3% salt
  • 2.5% baking powder
  • 9% fresh eggs
  • 10% filling: browned chopped hazelnuts
  • 17% filling: browned flaked almonds

Method

  1. Mix the chilled butter and sugars with the salt.
  2. Add the egg to the butter-sugar mixture and blend.
  3. Once the egg is incorporated, add the flour mixed with the sifted baking powder.
  4. Gently mix in the flaked almonds and chopped hazelnuts.
  5. Process the dough using the Kalmeijer KGM biscuit machine.
  6. Use wreath roller no. 1123-900/A or size 30 / 90 mm.
  7. Before baking, brush with whole egg and sprinkle with a mixture of chopped hazelnuts and flaked almonds.
  8. Bake at approximately 175–180°C for 12 to 15 minutes.
